85 г | Сахар 1 |
253 г | Сахар 2 |
2 г | Лимонная кислота Dr. Oetker |
5 г | Агар пищевой Dr. Oetker |
130 мл. | Вода |
85 мл. | Сиропа глюкозы |
Взбить масло со сгущенным молоком до кремообразного состояния.
Начать взбивать белок с сахаром(1) на низкой скорости.
В сотейник поместить сахар(2), сироп глюкозы воду и агар-агар, варить до 115 градусов.
Увеличить скорость миксера, всыпать лимонную кислоту и влить сироп, продолжая взбивать.
Когда масса остынет до 45-50 градусов, ввести масляный крем.
Вылить в рамку 20×20 и охладить. Нарезать.
